As breakfast is the most important meal of the day, why not make it healthy yet decadent? This chocolate orange baked oats recipe is packed with healthy ingredients, vegan, nut and dairy free AND it tastes amazing and deliciously chocolately with fresh bursts of orange. The perfect start to any morning!

If you're anything like me, a quick and easy breakfast is key for a weekday which makes baked oatmeal a fantastic healthy option. It's so simple to make on a Sunday for the week or to whip up after work so you have a great start to the next day. Baked oats will store in the fridge for 3-5 days in an airtight container and can easily be eaten cold or warmed up in the oven or microwave. Full of good ingredients it keeps me full until lunchtime as well and it's hits of sweetness remove that craving for me personally! It tastes like dessert for breakfast!

I love how I made the recipe below, but you can easily change this up to suit your own tastes and adapt it if you are vegan or not. To make it suitable for a nut allergy I used Sunflower seed butter for this recipe as it's a great substitution in texture and available in many wholefood or health stores (e.g Holland & Barrett) if you cannot locate in your supermarket. You can use any nut butter instead if suitable for your diet! Peanut, almond or cashew butter would all work fantastically.

Any choice of plant milk is suitable for the oatmeal as well, I used oat to once again be nut free and to allow the chocolate & oranges to sing on their own; but almond and drinking coconut milk (not the stuff you put in curries, but Alpro drinking!) would give this a great additional flavour. Any type of yogurt is also great to serve this with. Plus if you don't have any oranges, you can easily substitute satsumas, clementines etc.

This really is the perfect make ahead, healthy and decadent breakfast that will brighten up any morning and keep you energised through until lunch. I can't wait for you to try it and fall in love with it too!
